KAPPA is a colorless powder that is extracted in liquid form from Kappaphycus Alvarezii (Elkhorn Sea Moss) also known as Kappa Carragenean. It produces a brittle and firm gel. It is used to create firm textures in vegan cheeses and desserts. It dissolves while cold and is heated to about 80°C for gelification. It can withstand 60°C after gelled.
