RECIPES YOU WILL MAKE

KESAR PISTA BURFI (केसर पिस्ता बर्फ़ी) MACARON
Made with Kesar (Saffron) and Pista (Pistachio), and blended with Elaichi (Cardamom) for a warm aroma. Typically set into diamond or square shape.

TONKA LATTE MACARON
A sweet tart crust (pâte sucrée) made with Tonka and vanilla pastry cream base, and Topped with whipped coffee ganache or coffee jelly, and Garnished with caramelized hazelnuts or gold dust.

MEHLEP MACARON
A combination of the Mehlep and Rose Water which is similar to Ma’amoul (date or nut-filled cookies) or Barazek (sesame-pistachio cookies). The flavor profile is floral, nutty, and slightly bitter-sweet.

It's characterized by its vibrant reddish-brown threads, a potent aroma, and a unique slightly bitter and sweet flavor. Saffron is prized for its ability to impart a golden-yellow hue and distinct flavor to various dishes. 

MEHLEP – The Hidden Gem
Used in Eastern Mediterranean baking, this rare spice made from cherry pits adds a nutty, almost almond-vanilla twist. We’ll explore how to pair it with stone fruits or floral flavors for unexpected harmony. MEHLEP, also known as mahlab or mahaleb, is a fragrant spice derived from the seeds of the St. Lucie Cherry (Prunus Mahaleb) tree. It is popular in Middle Eastern and Mediterranean cuisines, prized for its unique, slightly sweet, and bitter flavor with notes of almond and cherry. This aromatic spice is commonly used to enhance the taste of baked goods, desserts, and other sweet dishes. 

TONKA – The Forbidden Vanilla
Warm, intoxicating, and wrapped in aroma. Tonka bean adds depth like no other — hints of vanilla, caramel, and spice. This is your gateway to a macaron that seduces with scent before you even take a bite. Tonka beans are the seeds of the Dipteryx odorata tree, native to northern South America. They are known for their strong, fragrant aroma, often described as a blend of vanilla, almond, cinnamon, and tobacco. In culinary applications, they are used to add depth and complexity to desserts, pastries, and even savory dishes, often grated like nutmeg or infused in liquids. However, they are restricted in some regions due to the presence of coumarin, a compound that can be toxic in large quantities.
