These Vegan Feuilletine Flakes are something that is used extensively in high end pastries and desserts to create crunchy textures such as in mousse cake bases (entremets) artisan chocolate fillings and more. Any professional patisserie cookbook will use this ingredient in their desserts as it is a foundational component of traditional french pastry. Traditionally made with butter and eggs Feulletine flakes are not commercially available without animal products. In this recipe you will learn how to create this important ingredient completely vegan. The full name paillete feuilletine means “leaf-like flakes” is a crispy confection made from thin, sweetened crêpes.

- 0.3g Xanthan Gum
- 3g POTATO PROTEIN 300
- 60g Water
- 60g Butter Alternative, unsalted
- 1g Sea Salt
- To Taste Butter Aroma -Optional
- 60g Confectioners Sugar
- 5g Vanilla Extract
- 60g All Purpose Flour
