GERBET (VER 3) is a proprietary dry powdered plant based vegan Egg White product mix that has been developed by Vegan Gastronomy to enable anyone to become a professional master Macaron pastry chef. You simply mix this powdered product with Water and then use it as a replacement for Egg Whites.
This new version (developed in 2023) has a new type of Mycellium, Mushroom Root, from the Himalayas that disguises the Potato Protein content of this plant based mixture. This product is designed to be a low cost egg white replacement.
The GERBET mix product includes Potato Protein, a proprietary and a specially developed Methycellulose or Plant Fiber, traces of Xanthan Gum and Mycellium. This new proprietary plant based mixture was developed together with some of the world's leading ingredient companies to develop consistent solutions every time. The mix develops perfect "feet", develops fluffy interiors, and reduces drying time - making it the perfect solution for egg-free vegan macarons. Additionally this new formula makes this a perfect solution for replacing Eggs.
